Ghost kitchens turned around between every shift.
Ghost and cloud kitchen cleaning in the Bay Area and Sacramento: brand stations, packaging and pickup areas, driver lobbies, cold storage, floors and drains, overnight.
What a ghost kitchen plan covers.
A delivery-only kitchen never sees its customers, but every order carries its reputation out the door. Several brands may cook under one roof, the order screens rarely go quiet, and drivers come and go from lunch until late at night. Fieldstone cleans ghost kitchens and cloud kitchen facilities across the Bay Area and Sacramento so operators and their brand tenants can keep tickets moving.
These kitchens differ from shared commissaries. Our shared and commissary kitchen plans revolve around tenants booking hours at common stations. A ghost kitchen usually gives each brand its own sealed kitchen unit and adds a busy packaging, pickup and driver area in front, so the cleaning plan has to cover both sides.
Delivery-only kitchens in the Bay Area.
Multi-brand delivery kitchens in San Francisco and Oakland put many brand units under one roof.
Facilities like these run close to 365 days a year, with each brand’s unit on its own menu and schedule. The common corridors, pickup counters and driver lobbies tie it all together, and they take the heaviest traffic in the building.
Brand kitchens with tight turnovers.
Each kitchen unit gets its own checklist, set to the brand’s shifts. Between the lunch and dinner pushes, the crew wipes prep surfaces and equipment exteriors, empties trash, cleans handwashing sinks and spot mops the floor, so the next shift starts on a reset station. After close, units get their full clean: equipment fronts and sides degreased, walls behind the line washed and floors scrubbed.
Brands that sublease units on separate schedules each get a clear record of what was done in their space.
Packaging, pickup shelves and driver lobbies.
The front of a ghost kitchen moves faster than any dining room. Packaging tables and bagging stations are cleared and wiped, label printers and order screens are dusted, and pickup shelves and lockers are cleaned so every bag lands on a clean surface. Spilled sauces, torn bags and loose napkins are cleaned up before the next driver wave.
Driver lobbies and waiting areas take constant foot traffic in every kind of weather. Crews mop floors, clean entry glass and door pulls, empty bins, wipe benches and keep the driver restroom clean and stocked, which matters more than it seems with a steady stream of drivers coming through all week.
Cold storage, floors and drains.
Walk-in coolers and freezers, whether shared or assigned to each brand, get floors swept and mopped, shelving wiped and gaskets cleaned, with product moved shelf by shelf and returned. Dry storage rooms are swept and their shelving dusted, and receiving areas are cleared of cardboard and shrink wrap.
Floors are machine scrubbed with degreaser, and every floor drain is cleared and flushed so water moves and odors stay down. Corridor floors between units are scrubbed each night, and periodic deep work through commercial floor care restores tile and sealed concrete that take carts and foot traffic all day.
Overnight cleaning around a 24-hour menu.
Most ghost kitchens close their order screens for only a few hours overnight, and that is when the deep work happens. Crews move through the building unit by unit, cleaning each one fully while the next stays ready for an early opener. Common corridors, restrooms and the driver lobby are finished before the morning crews arrive.
Background-checked cleaners, supervisors running quality inspections, and our certificate of insurance on file with the operator give the facility manager confidence in who is inside after hours.
What sets the price.
Price follows the facility: the number of kitchen units, shared versus brand-assigned cold storage, the size of the pickup and driver area, how many shift resets run each day and the floor type. Overnight full cleans and daytime resets are priced separately.
A walkthrough during an evening rush and again after close shows how the building really works, and the quote follows. Exterior trash areas and entries can go on that quote too.
A few useful answers
Common questions.
Can a brand's kitchen be reset between lunch and dinner?
Yes. Prep surfaces, equipment fronts, sinks, trash and floors are reset in that window so the dinner shift starts clean.
Do you clean the driver pickup area and lobby?
Yes. Pickup shelves, packaging tables, driver lobbies and restrooms are cleaned through the day and fully at night.
Why not clean a ghost kitchen on a shared-kitchen plan?
Because each brand usually has its own sealed unit and the building adds a busy pickup and driver area, so the plan has to cover separate units plus the front of house.
When does deep cleaning happen if orders run late?
In the overnight window when order screens close, moving unit by unit so early openers stay ready.
